Dessert raspberry compote

Kissel is a Russian and Polish dessert with an unusual consistency for palates of other countries. Kissel is a fruity jelly-like dish that is actually considered a drink. In terms of taste, this could be compared to red fruit jelly or red fruit pudding.

Ingredients

  • 800 g raspberries
  • 4 tablespoons potato starch
  • 120 ml of warm water for the starch
  • 100 g of sugar

Description

Half drink, half jelly: Russian Kissel is a thickened sweet drink, sometimes with a pronounced sour note, comparable to a cold fruit bowl. Traditionally it is cooked from fruits and berries and thickened with potato starch. The fast version comes from the bag: Every Russian supermarket sells the powder. Mixed with water and briefly boiled, it delivers a rather good Kissel. However, the packaged Kissel does not taste as delicious as the real thing, made at home.  

In our recipe we show you how Kissel is made from fresh raspberries. You might like to omit the sugar or add some cane sugar instead.

1. Place raspberries into a pot.

2. Add 1.5 l of water.

3. Cook on medium flame for 10 minutes.

4. Bring to a boil.

5. Add sugar. Stir.

6. Dissolve potato starch in water.

7. Stir well.

8. Puree the berries with a hand blender, strain and pour them back into the pot.

9. Add the dissolved starch to the berries. Cook for another 20 minutes, stir occasionally.

10. Allow to cool and serve in cups.
