Draniki with salmon and horseradish
Draniki are potato pancakes that originally came from Northern Europe. In Belarus we are firmly convinced that it is an old Belorussian dish. In reality, Belarusians only learnt about potato pancakes from German Jews in the 19th century. Over time, however, Draniki have become a Belarussian national dish.
Potatoes came to Europe from South America and were not accepted by the people for a long time. In Belarus, potatoes were even called "devil apples". Once, an uprising broke out in Belarus that set half of the country on fire - all .because of potatoes. The instigators had to pay for their fight against the potatoes with their heads.
Today, potatoes are the main vegetable in Belarus that can successfully replace the porridge, all other vegetables and even the dessert.
Ingredients
- 500 g potatoes
- 250 g flour
- 2 onions
- 1 tablespoon salt
- 60 ml of vegetable oil
- 2 eggs
- Thyme branch
For the filling:
- 200 grams salmon
- 2 tablespoons horseradish
- 3 radishes
- half a lemon
Description
There are different Draniki recipes. The difference usually lies in how to rub the potatoes - very fine, medium coarse or coarse.
Remember that potatoes contain a lot of starchy liquid, which must be carefully expressed.
The potato pancakes usually include herbs: Parsley, dill or thyme. In addition, Draniki can also be prepared with rosemary and beetroot leaves (Swiss chard).
In this dish, frying takes up most of the time. If you do not want to use a food processor on principle, the potato grating will cost you a lot of time and energy.
Draniki are fried until a golden brown crust forms. The potato pancakes can be served with sour cream or mustard. But we suggest trying Draniki with salmon, horseradish, lemon and radish. Bon Appetit!
