Bean salad with beef tongue

In Russia boiled beef tongue is considered a delicacy. It is often served on public holidays in the form of a cold snack. Today, we show you a recipe for a different kind of sandwich: with salad, green beans and beef tongue.

Ingredients

  • Beef tongue 450 g
  • Hot carrot salad 200 g
  • Green beans 150 g
  • Red beans 150 g
  • Big bread roll
  • Cornichons 100 g
  • Mayonnaise (or natural yoghurt) 150 g Lettuce

Description

Properly prepared beef tongue is tender, nutritious and delicious. Beef tongue is a solid muscle containing no fat and no connective tissue, so that dishes with beef tongue are easy to digest. Furthermore, beef tongue is really healthy: It contains large amounts of protein, zinc and iron as well as the entire spectrum of B vitamins.

Cooked beef tongue is served not only as a cold appetizer, but also in salads. In our recipe, we prepare a salad of carrots, beans, lettuce and cucumbers and add beef tongue. To prepare a lighter version, you can skip the bread and prepare the salad not with mayonnaise, but with sour cream or yoghurt. Enjoy!

1. Cut cornichons into slices.

2. Pour boiling water over the beans and let them rest for 2-3 minutes.

3. Boil beef tongue for 1 hour. Remove protective film.

4. Mix vegetables with the beans.

5. Add mayonnaise or natural yoghurt.

6. Cut open the rolls and remove soft dough from inside.

7. Cut the cold tongue into slices.

8. Place lettuce leaves into the rolls.

9. Place beef tongue on top.

10. Add vegetables and top with another layer of meat. Refrigerate for 20 minutes.

11. Serve in portions.
