Salad “Olivier”
If we would have to choose the top 5 of the most typical dishes for the Russian cuisine, the Olivier salad (after Pelmeni and Borsch) would have taken third place. Everyone knows this salad, everyone loves it. In Russia, there is no party without the celebrated salad Olivier!
Ingredients
- 3 potatoes
- 2 carrots
- 4 chicken eggs
- 250 g pickled cucumbers
- 250 g canned peas
- 450 g boiled sausage
- Spring onions
- 100 g of sour cream
- 150 g of mayonnaise
Description
Already the name suggests it: this salad has a connection to France. In fact, the recipe was created by a French chef who ran a French restaurant in Moscow in the 1860s.
The original recipe was a little more complicated, but it was simplified during the era of the USSR. The recipe for the common Russian persists to this day. Incidentally, Olivier is not only popular in Eastern Europe. The Russian salad has entered Spanish cuisine ("Ensaladilla rusa"), Persian cuisine ("Sālād Olivieh") and is prepared in the whole Balkan region.
If you often cook Olivier salad, you might want to experiment with the ingredients. For example, Russian boiled sausage can be replaced with chicken or beef, peas and carrots with olives and capers. Do you pay attention not to eat too many calories? Then replace the rich mayonnaise with a light crème fraîche or natural yoghurt.
